Foodservice and Tray Delivery Systems with Kendra Stoen

Confused about the different types of foodservice systems?

I totally get it. After years of working in foodservice, I still feel like there's always something to learn. And with all the challenges with the food industry, food shortage, and currently, inflation causing a huge rise in food costs, it ultimately impacts the way foodservice systems operate.

This is why, in the real world, most places have implemented a combination of systems. They generally have a primary foodservice model but do a mixture of other types as well.

On the exam, chances are you have to answer questions about one of the systems at a time. So this episode explains the 4 main foodservice systems with some pros and cons of each.

It's unlikely you were exposed to all the different foodservice models in your internship but you will need to know them for the RD exam.

There's no one better to teach these topics than my friend Kendra Stone. She's a Registered Dietitian and a consultant who travels the country helping hospitals with their foodservice operations. And wow, she has a lot of amazing stories to share.

So this is what you'll learn in this episode:

1) The 4 main foodservice systems and how there's often a combination in most kitchens
2) How the tray delivery process has progressed throughout the years plus a look back at how trays were delivered to patients historically
3) Fun stories from guest Kendra Stone who was destined to be a foodservice dietitian

If you're confused about the different foodservice systems or need some clarification and want to have fun learning (don't we all), then this episode is for you.
